The Alpha S1 Casein test provides important information on the casein protein found in goat’s milk that is important for cheese making. Polymorphisms in the Alpha s1 Casein gene (CSN1S1) are indicative of the amount of protein and fat that are produced with higher levels associated with the best cheese making. This DNA test will provide producers with the production levels of the Alpha s1 Casein. Variations that are correlated with high and low levels of production and will be assessed. Detection of variants E, F and N are correlated with low levels of production. High levels of production are correlated with variants A and B. Each goat will have two alleles that are from each parent and will determine their Alpha S1 Casein production level.
